Have a Healthy Meal Before Trick or Treat!

This Halloween, fill the kids up with healthy Halloween food before trick or treating. Impress your family or perhaps some friends with a spooktacular supper.

This spooky-looking meal is simple to put together and pretty quick to prepare.

Halloween can be a hectic holiday. It’s pretty much celebrated on the 31st no matter what day of the week it falls on. On school nights, it can be tough getting a good meal in before trick or treating. Follow the steps for this quick and easy spooktacular supper.

Step 1.

The night before, get kids involved in preparing the spooktacular supper. Have them tint almond slivers with red food dye and sliced mushrooms with black. Refrigerate the mushrooms and store the almonds in an airtight container


Next, have them create tomato flies with plum tomato heads, baby Gerkin tails and cucumber slice wings. Attach parts using toothpicks.


Step 2:

On Halloween night, make the monster meatloaf. Use your favorite recipe for the meatloaf. Meanwhile, boil 2-3 eggs. Crack lightly and soak in beet juice or red food dye.



Step 3.

Ghostly Mashed Potatoes

While the meatloaf cooks, peel and boil 4-5 potatoes. Drain and add butter, salt, pepper, and a little milk. Mash with hand mixer or food processor. Put the mixture in a pastry bag, or even a plastic Ziplock bag with the corner cut out. Pipe the potatoes onto a cookie sheet in mounds to resemble ghosts.


Add a black olive slice for the mouth and bits of black olives for eyes. Toast lightly under the broiler for 2-3 minutes, watching carefully.


Step 4.

Bloody Fingers Garlic Bread Sticks

The meatloaf is done now. While it cools, it is time to do the bread sticks. Use sheets of refrigerator crescent roll dough. Roll them up into finger shapes. Stick on an almond sliver fingernail. Brush with melted garlic butter

Beat an egg in a small bowl and add a few drops of red food color. Brush the “fake blood” over the top of the fingers. Bake according to package directions.


Step 5.

Creepy Crawly Tossed Salad with Slime Dressing

While the bread sticks bake (11-13 mins.) put the salad together. Wash and toss mixed greens in a bowl. Add the tomato flies and black mushrooms. The slime dressing? It’s just Green Goddess renamed. How simple is that!


Step 6.

Back to the Monster Meatloaf

The meatloaf has cooled on a bed of greens. Now it’s time to add some spooky bloodshot eyes and other gross stuff. Secure pieces of the roasted red peppers on top with toothpicks.

Peel the eggs and slice in half. Slice a bit off of each tip and secure a green olive slice for the iris and pupil. The bread sticks are done. Now it is time to eat a fast, healthy meal of healthy Halloween food before trick or treating.
