Spicy Pineapple Chicken Recipe

Did you ever tear out a recipe from a magazine when you are at the doctor, dentist office, or perhaps while getting your hair done? That’s where I got this recipe for an easy spicy pineapple chicken dish. It sounded so incredibly easy, and tasty  too. Plus I had been looking for a way to use the mint still thriving in my herb garden in November.  Something other than for iced tea. 

So with a fake cough to cover the sound, I ripped out a tiny corner of the magazine with this recipe. I tweaked the amounts but not the ingredients. I increased the pineapple chunks from a quarter cup to one cup and the garlic chilli sauce from two tablespoons  to a half cup to have more of that tasty topping. I used the already cooked rice packets that you pop in the micro…garlic butter flavored. It was yum. Will be making this often. 

Cook chicken fillets in hot olive oil in a skillet. Turn once. Cook until done.


In a separate bowl mix chopped pineapple and garlic chilli sauce. Chop up a half cup of fresh mint. 


Cook the rice according to package directions. Stir in the chopped mint. 


Top the rice with a chicken fillet. Spoon on pineapple mixture.
