Vegan Cookie Recipe: Oatmeal-Peanut Butter-Banana-Chocolate Chip

Oatmeal, Bananas, Peanut Butter and  Dark Chocolate Chips. All good for you! 

This recipe uses only four healthy ingredients.

“If it tastes good, it’s probably bad for you.” Not so anymore!  This vegan cookie recipe calls for only four healthy ingredients. They have an incredible taste.

Dairy free, they will please vegans. I calculated the calories per teaspoon-sized cookie to be ridiculously low. Couldn’t be more than about 10 calories apiece.  This makes them the perfect treat for dieters. Although they are not totally gluten-free (the oatmeal), they are certainly lower than that of a flour-based cookie.

The oatmeal combines with creamy peanut butter and mashed banana to create a cookie-like texture. Toss in plenty of dark chocolate chips (rich in antioxidants) and you have a cookie that rivals the traditional chocolate chip cookie.   These vegan cookies are really uncomplicated. A potato masher is about all the equipment that is needed. No mixer or food processor is required.

Ingredients for  Vegan Cookies

  • 2 very ripe bananas
  • 3/4 cup creamy peanut butter (all natural)
  • 1/2 cup quick oats
  • 1/2 cup chocolate chip


      Mash the bananas with a potato masher.   IMG_20140301_160145   Stir in the oatmeal   Stir oatmeal into mashed bananas.   Add the creamy peanut butter.   Stir in a serving spoon-sized spoonful of creamy, natural peanut butter.   Stir in the chocolate chips.
Stir in the chocolate chips last.
Stir in the chocolate chips last.
Bake at 325 for about 8 minutes.
